I came to the same conclusion as you that the water needs to stabilise before adding the grind. Massive improvement.
Mobile syphon bar sounds sweet. I recently came back from Japan where I saw quite a few of the balance syphons. Had I not been luggage restricted I would have brought some home; they're awesome.</description>

Just came across this post as I was looking for stands for TCA-2/3 syphons.  I have owned a TCA-2 for just under a year, but before that I had a Cona.  The Hario is far superior, IME. I used to add the grounds before the water came up, but now I check the temp of the water, and let it stabilize.  The difference is most definitely noticeable.  Also, a butane burner is much quicker and more precise than the stock one that uses denatured alcohol.

I love syphon coffee and will be running a mobile syphon bar in the States this summer, predominantly in the NorthEast.
I should be getting a couple of these sweet burners from Sorrentina Coffee

		<description>I have had a similar looking Yama for over a year. I always wanted one and I love it. I am interested that the Hario might me sturdier in construction. How has the one you got holding up? The Yama works great but the nuts and bolts tend to loosen up and need to be tightened. I give the cloth filter over the stainless disc a little scrub with a stiff brush used only for that and run it through the dishwater, it is easy to use to get such a rewarding coffee.  My supplier in the USA roasts and ships the beans the same day I call them. I get Sumatran Mandheeling whole bean city roast in five pound batches.</description>
